The Big Valley Bombo is our fun yet contemplative party/pizza
wine. Bombo is a termed used by Swan Valley locals, especially
those of Italian descent, to describe something synonymous with
cheap and cheerful plonk, usually brewed up in the back shed and
taken back to the city by the family in flagons and casks alike.
Whilst is drinks like a simple and delicious chilled red/white blend
it’s actually quite complex and comprises 3 distinct components.
1.Skin Contact Semillon from the Turbulent Juice
2.Carbonically Macerated Grenache
We took some of our beautiful grenache and loaded it into two nally
bins and wrapped it all up to undergo carbonic maceration for 14
days. This component was then direct pressed to steel and developed
a sunset fuchsia colour and confected aromatics. During its time in
the winery this component developed a little mouse character which
required a homeopathic dose of 20ppm Sulphur to the blend after
blending at bottling.
3.Classically Macerated Grenache
This last component saw grenache from all 3 picks compiled into
steel and plastic fermenters. Macerated for 8-12 days and then
pressed to continue ferment and elevage in the same vessels.
The resultant blend is an alluring light red wine thick with a
powerfully aromatic nose, textural and developed palate but with a
whole lot of confected red berries and acid to drive it home as a
certified banger. It’s a taste explosion!
